This vegan walnut banana bread tastes super delicious and is also prepared very quickly. In addition, the walnuts contain many important nutrients, such as a high proportion of omega-3 fatty acids. Various micronutrients such as potassium, magnesium, iron, and zinc are also contained in walnuts in larger quantities.
Due to the complex carbohydrates in the oatmeal, as well as the high fiber content in chia seeds and flax seeds, the banana bread will keep you full for a long time.
Whether for breakfast, brunch, or dessert, this banana bread is truly suitable for any occasion, whether as a snack or a full meal.

Ingredients
- 2 brown bananas
- 50 g oatmeal
- 100 g spelt flour
- 1 tbsp chia seeds
- 1 tablespoon crushed flaxseed
- 1 tsp. baking powder
- 60 g walnuts
- 1/2 tsp vanilla extract
- 70 ml plant-based drink
- 1 tablespoon coconut oil
- 1 tbsp cocoa powder (as desired)
Preparation
-
First, preheat your oven to 180 degrees Celsius (convection).
-
Next, use a fork to mash the 2 bananas into a purée and then place the mixture in a bowl.
-
Then, place the walnuts in a food processor until they are chopped and add them to the bananas.
-
Next, melt the coconut oil and add it to your mixture.
-
Then, add the remaining ingredients to the bowl and mix all the ingredients well until a creamy batter is formed.
-
Afterwards, pour the banana bread batter into a loaf pan. If necessary, lightly grease the mold.
-
If you like, you can also add a few walnut halves on top of the batter for decoration.
-
Now bake the banana bread in the oven for about 40 minutes. If the bread becomes too dark on top, you can cover it with foil.
-
After baking, remove the banana bread from the oven and let it cool briefly. Then you can take the banana bread out of the pan and cut it into pieces.
