Children love muffins. Unfortunately, conventional muffins usually contain a lot of sugar. However, even with the natural sweetness of bananas, you can make delicious muffins that are also healthy. The base for the dough is our Verival Porridge cocoa banana, made from whole grain oatmeal flakes, which are high in fiber and free of added sugar, along with cocoa .

This recipe does not require any refined sugar, yet the muffins are pleasantly sweet due to ripe bananas. The browner the bananas, the better, as they taste even sweeter.

Breakfast muffins with cocoa and banana
Ingredients
- 2 very ripe bananas
- 250 g Verival porridge cocoa banana
- 130 g wheat or spelt flour
- 1 pkg Reinweinstein baking powder
- 85 ml sunflower oil
- 135 g plain yogurt
- 80 ml milk optionally, you can also use a plant-based drink
To decorate
- 1 handful of Verival porridge cocoa banana
Preparation

Preheat the oven to 200°C top/bottom. Line a muffin tray with paper liners.

Peel the bananas and mash them with a fork.

Add sunflower oil, yogurt, and milk to the mashed bananas and mix everything with a whisk.

In another bowl, mix the wheat flour with baking powder and the porridge.

Then add the dry ingredients to the banana mixture and mix with a hand mixer.

Spread the muffin dough into the paper tins and sprinkle some porridge banana cocoa on top.

Bake the muffins in the preheated oven (middle rack) for about 20 minutes.

Let the muffins cool down and then enjoy.
